Coyoacán Churro Stands Sparked Everything

San Diablo began with the fresh-filled churros founder Scott Porter encountered in Coyoacán, Mexico City, in 1996. Street stands there served hot churros with fillings such as dulce de leche and sweetened condensed milk—a vivid contrast to the unfilled versions he knew in the United States. Two decades later, he launched San Diablo in Utah to recreate that made-to-order experience. The brand’s artisan churros have since earned Utah’s Best of State pastry honor five times, bringing a Mexico City street-food inspiration to celebrations across the United States.

Scott Porter Brought Coyoacán Home

Scott Porter was a fluent Spanish speaker and longtime Mexico traveler when a night in Coyoacán planted the idea for San Diablo. He kept wondering why fresh-filled churros were so hard to find in the United States. In 2016, at a career crossroads, he returned to that question and launched the business at a Utah fall event with a newly hired team of artisans. Porter’s background spans entrepreneurship, international work, and brand experience, but San Diablo centers on a simple belief he carried home from Mexico City: food can create happiness by giving people a reason to gather.
