Sherif Badawy moved from Egypt to the U.S. and kept searching for baklava that tasted like the kind he loved growing up. What he found felt off: too sweet, too heavy, and often short on nuts. He’s also a pediatrician and marathon runner, so he cared about how indulgence fits into real life. Over time, he studied the craft, learned from baking traditions in the region, and refined a version that stayed true to baklava’s roots while cutting the overload.
