Origins

Zhoug is the essential condiment of Yemeni cuisine, brought across the Middle East by Yemeni Jewish communities in the mid-20th century and now ubiquitous in Israeli street food. Today it appears on falafel, shawarma, and mezze tables from Jerusalem to Dubai. Its name is thought to derive from an Arabic word meaning "ground"; like pesto, it was traditionally made with a mortar and pestle.
